Step 1: Prep the Salmon
Cut your salmon fillets into bite-sized 1-inch cubes. Pat them dry with paper towels so the coating sticks better.

Step 3: Coat the Salmon
Dredge each salmon cube in flour first, dip it into the eggs, then roll it in the seasoned panko. Set aside on a plate until ready to fry.
Step 4: Fry Until Crispy
Heat about 1 inch of vegetable oil in a skillet over medium heat. Once hot, fry the salmon in batches for 2–3 minutes per side until golden brown and crispy.

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until creamy and smooth.
Step 6: Serve & Enjoy
Drizzle the bang bang sauce over the salmon bites, sprinkle with sesame seeds or peanuts if you like, and enjoy right away.
