Step 1: Sauté the Base
Heat olive oil or butter in a large skillet or pot. Add onion and garlic, sautéing until soft and fragrant.
Step 2: Add Chicken & Chipotle
Stir in the cooked chicken, chopped chipotle peppers, and a spoonful of adobo sauce. This is where that smoky, spicy kick starts to build.
Step 3: Add Liquid & Pasta
Pour in chicken broth and heavy cream. Stir, then add the uncooked pasta. Mix well, bring to a simmer, then cover the pot.
Step 4: Cook Until Tender
Let it cook for about 10–12 minutes, stirring now and then, until the pasta is tender and most of the liquid has been absorbed.
Step 5: Get Cheesy
Turn the heat to low, add the shredded cheddar, and stir until it melts into a dreamy, creamy cheesy pasta sauce.
Step 6: Serve & Enjoy
Taste and adjust with extra salt, pepper, or more adobo if you want extra smoky heat. Let it sit for 2–3 minutes to thicken before serving.
