One-Pot Smoky Chipotle Cheesy Chicken Pasta

Ingredients
  

  • 12 oz penne pasta or any short pasta you love.
  • 2 cups cooked chicken shredded or diced.
  • 3 cups chicken broth.
  • 1 cup heavy cream for richness.
  • 1 –2 chipotle peppers in adobo sauce finely chopped.
  • 1 tbsp adobo sauce straight from the can.
  • 1 small onion chopped (optional but adds flavor).
  • 3 cloves garlic minced.
  • 2 cups shredded cheddar cheese.
  • 1 tbsp olive oil or butter.
  • Salt and pepper to taste.

Method
 

  1. Step 1: Sauté the Base
  2. Heat olive oil or butter in a large skillet or pot. Add onion and garlic, sautéing until soft and fragrant.
  3. Step 2: Add Chicken & Chipotle
  4. Stir in the cooked chicken, chopped chipotle peppers, and a spoonful of adobo sauce. This is where that smoky, spicy kick starts to build.
  5. Step 3: Add Liquid & Pasta
  6. Pour in chicken broth and heavy cream. Stir, then add the uncooked pasta. Mix well, bring to a simmer, then cover the pot.
  7. Step 4: Cook Until Tender
  8. Let it cook for about 10–12 minutes, stirring now and then, until the pasta is tender and most of the liquid has been absorbed.
  9. Step 5: Get Cheesy
  10. Turn the heat to low, add the shredded cheddar, and stir until it melts into a dreamy, creamy cheesy pasta sauce.
  11. Step 6: Serve & Enjoy
  12. Taste and adjust with extra salt, pepper, or more adobo if you want extra smoky heat. Let it sit for 2–3 minutes to thicken before serving.
